Valentine's Day Specials

Staying in for Valentine's Day? Treat yourself or a loved one to a romantic steak dinner.

Ribeye Steaks are on special for $12/pound. Ribeye steaks are a thick-cut gourmet steak, cut from the prime rib. They are boneless and trimmed to perfection. They are great grilled with a little salt and pepper or seasoned with your favorite rub or sauce. 

Tenderloin Steaks are in stock for $22/pound. We also have a few tenderloin steaks in stock which are a two-inch thick center cut that is perfectly trimmed. The ultimate valentine's dinner. Please call The Mill to reserve. (One full tenderloin is also available, contact us to reserve. )

Want to try something new. Charles Ford, a loyal Deer Creek Beef customer shares his thoughts and recipe for a Honey Soy Marinated Skirt Steak.

In his own words:

Last Friday I picked up a skirt steak (try something new) and the
family liked it so much there were no leftovers.  I read that skirt
steaks are the favorite choice for fajitas, and our very basic "go-to"
marinade for fajitas is simply soy sauce and cayenne pepper.  But I
tried a different marinade on this and it was a real hit with the
girls, ( I and the dog are the only males here) so I thought I'd share
it with you.

3 Tbsp soy sauce
2 Tbsp honey
2 Tbsp balsamic vinegar
2 Tbsp cooking oil
2 cloves garlic chopped.

Whisk all that together until the honey's well incorporated.  Cut the
skirt steak in about 6 inch sections, and put them in a zip-loc bag.
Pour the marinade in, and work all (or most) of the air out.  Massage
the marinade into the meat, and put it in the fridge for 1 hour to
overnight.  (we did overnight).
When you take the steaks out, let them drain a bit, then grill them on
high heat.  Once they have a good sear on both sides, take them out
and let them rest.  Slice the steaks across the grain.  At this point,
they were still quite rare.  So I took the slices and put them in a
pan and sauted them until they were cooked through.
This method produced very flavorful strips of steak that were not at
all tough.  As I said, everyone liked it and there were no leftovers.

Thanks again for everything you and your organization does.  The end
product is just terrific.

Deer Creek Beef is proudly produced and sold by a partnership of third- and fourth-generation farmers deeply committed to conservation and sustainable agriculture. Both families are full-time farmers and very involved with every phase of the cattle operation. Angus cowherds are carefully managed in rotational grazing and forage systems. Calves are managed in small groups and finished for Deer Creek Beef on the home farms with locally-grown corn. They are taken in small groups to one of two small, family-owned and operated processing plants (both are federally inspected). No growth hormones or fed antibiotics are used. Both farms are recognized leaders in conservation, farmland preservation and environmental stewardship.

The cattle are raised with care and our beef is handled that way, too. It's a delicious product that you can feel good about serving

Deer Creek Beef and Maryland's Best

It's already March, which means Spring is just around the corner. It seems we get the feel of the warm sun on our backs at least once a week. And with the coming of Spring, is the coming of the Bel Air Farmers' Market. The market opens on April 12, so get your grill ready and we'll see you there!

Something's cooking at the Bel Air Farmers' Market

Our steaks are mouthwatering. But don't take our word for it. Come see (and taste) for yourself this Saturday at the Bel Air Farmers' Market.
We're firing up our grill and pulling out a new special in time for these cool, early Fall evenings--perfect grilling weather.

This week’s special:
New York Strip End-Cut steaks (vein steaks)   
$6.50/lb.

Cut from the sirloin end of the New York strip, with the same great flavor as our center-cut strip steaks. Dry-aged, thick cut and individually vacu-packed, these steaks are perfect for the grill and always a great value. We sell them as “vein steaks” because of the vein of gristle that runs naturally through part of the muscle. Slice around that and enjoy a wonderful steak!

A little salt and pepper is all they need, but they also work well with your favorite rub, marinade or recipe. Round off your menu by shopping the farmers’ market for some locally grown potatoes or corn, heirloom tomatoes, melons and fresh-baked bread. What better way to enjoy the new season than with a little grilling, a good steak and a local menu.

Building the perfect burger.
You choose. Start with our delicious, convenient patties or handcraft your own burgers from our amazing ground beef. Either way, just grill them to medium rare and finish with your favorite toppings. Local cheese, fresh vine-ripe tomatoes, grilled onions, bacon and sauteed mushrooms, or let them stand alone--with or without a bun. They’re that good.

The reason?
All our beef is aged for rich flavor and tenderness, even the cuts that go in our ground beef and patties. Our butcher grinds only our hand cut and carefully trimmed beef, making sure the mix stays lean (at least 85% lean). The patty machine makes a nice, thick 6-oz. patty that comes as close to hand-made as possible. The one-pound packs of ground beef and patties are all quickly frozen to preserve the quality and flavor until you’re ready to thaw, cook and enjoy.
